Lipase is a dynamic enzyme derived from Asperglls niger through a meticulous process of fermentation, extraction, and refinement. This versatile compound, when expertly compounded, finds extensive applications across numerous industries such as food, leather processing, feed, papermaking, washing, and bio-energy, showcasing its multifaceted utility.
Working Mechanism
Lipase, a specialized serine hydrolase, excels in catalyzing the hydrolysis of fatty acid glycerides, resulting in the creation of glycerol and fatty acids. The hallmark of this hydrolysis is its operation at the crucial oil-water interface. Additionally, this powerful enzyme is capable of catalyzing ester synthesis and transesterification reactions, enhancing its industrial relevance.
Properties
1. Temperature range: This enzyme performs effectively within a temperature span of 30-70ºC,
with an optimum efficiency observed between 55-65ºC.
2. pH range: The enzyme is active across a pH spectrum of 4.0-10.0,
with peak performance around a pH of 7.5.
3. Metal ions' impact on enzyme activity: Ca2+ and Mg2+ significantly enhance enzyme activity, whereas ions like Mn²+, Fe2+ and Zn2+ tend to inhibit its function. Cu2+ along with EDTA, show no significant influence on enzyme efficacy.

The liquid form is presented as a brown liquid with 100,000u/mL, while the solid form is a finely milled powder, boasting 100,000u/g.
Liquid enzyme parameters include a pH range of 6.0-7.5 at 25°C and a bulk density of ≤1.25g/mL.
The solid enzyme exhibits a fineness where 80% of the substance passes through a 0.4mm standard sieve.
2. Enzyme activity is precisely defined as follows: 1g of solid enzyme powder (or 1mL of the liquid enzyme), under specific temperature and pH conditions, hydrolyzes the substrate within 1 minute to yield 1umol of titratable fatty acids, equating to 1 unit of enzyme activity, denoted as u/g (U/mL).

Application method
1. In flour applications, lipase restores the integrity of gluten networks, enhancing dough stability, increasing air retention, and rendering bread cores lustrously white. The exterior becomes notably brighter. Recommended dosage is 0.01-0.05kg/T flour, with enzyme activity based on 100,000 units. When combined with food-grade xylanase, fungal a-amylase, and glucose oxidase, the collective effect substantially elevates noodle product quality.
2. Within the tanning industry, lipase targets leather fats, facilitating uniform softening of raw materials under gentle conditions, increasing leather yield while minimizing chemical use, and reducing skin wrinkles. Typically applied in degreasing and softening processes at 0.02-0.06% (based on raw material quality, enzyme activity at 100,000 units), it operates at 30-40°C for 30-120 minutes. Pairing with alkaline protease optimizes outcomes.
