Working Mechanism
Lipase, a dynamic serine hydrolase, excels in catalyzing the hydrolysis of fatty acid glycerides to yield glycerol and fatty acids. Uniquely operating at the oil-water interface, it also demonstrates prowess in driving ester synthesis and transesterification reactions, broadening its utility across various industrial applications.
Properties
1. Temperature range: This enzyme exhibits remarkable effectiveness within a 30-70ºC scope,
with optimal performance observed between 55-65ºC.
2. pH range: It maintains efficacy within a pH span of 4.0-10.0,
with peak activity at a pH of 7.5.
3. Influence of metal ions on enzyme activity: Notably, Ca2+ and Mg2+ enhance enzyme activity, whereas Mn²+, Fe2+ and Zn2+ diminish it. Cu2+ and EDTA are neutral, having no discernible effect on the enzyme’s activity.

2. Definition of enzyme activity: 1g of solid enzyme powder (or 1mL of liquid enzyme) at specific temperature and pH conditions, generates 1u mol of titratable fatty acids in 1 minute, equivalent to 1 unit of enzyme activity, denoted as u/g or U/mL.

Application method

Recommended usage is 0.01-0.05kg per ton of flour, calculated at 100,000 units of enzyme activity. When synergized with food-grade xylanase, fungal a-amylase, and glucose oxidase, it significantly elevates noodle quality.
2. Within the tanning industry, Lipase targets and softens fats in leather under gentle conditions, boosting leather yield and minimizing chemical usage. It visibly reduces skin wrinkles, operating efficiently in degreasing and softening at 0.02-0.06% relative to raw material quality, and at 30-40°C for 30-120 minutes. For optimal results, it is often paired with alkaline protease.
3. By incorporating this enzyme into animal feed, you can unlock the potent benefits of releasing short-chain fats and anti-acids. This remarkable action enhances the utilization of raw materials, elevating the flavor profile of the feed. Typically, an optimal dosage ranges from 0.01-0.05%, considering the quality of raw materials and boasting an enzyme activity of 100,000 units.
4. In the dynamic world of the paper industry, lipase plays a pivotal role in mechanical pulping and waste paper deinking processes. It effectively removes triglycerides from pulp, significantly improving the efficiency of deinking waste paper. The recommended enzyme preparation addition is between 0.04-0.10L/T pulp, maintaining an enzyme activity of 100,000 units.
