Working Mechanism
Lipase, a distinguished serine hydrolase, orchestrates the hydrolysis of fatty acid glycerides, transforming them into glycerol and fatty acids masterfully at the oil-water interface. Beyond this, it excels in catalyzing ester synthesis and transesterification, showcasing unparalleled versatility.
Properties
1. Temperature range: This enzyme is effective within a broad temperature spectrum of 30-70ºC,
wherein it displays peak performance between 55-65ºC.
2. pH range: It operates efficiently across a pH range of 4.0-10.0,
with an optimal performance at a pH of 7.5.
3. Influence of metal ions on activity: Metal ions such as Ca2+ and Mg2+ significantly enhance enzyme activity, whereas Mn²+, Fe2+ and Zn2+ inhibit it. Meanwhile, Cu2+ and EDTA exhibit minimal impact on enzyme efficacy.

For the liquid enzyme, pH at 25°C ranges from 6.0-7.5, with a bulk density of ≤1.25g/mL.
Solid enzyme surpasses fineness expectations, with a ≥80% pass rate through a 0.4mm standard sieve.
2. Enzyme activity definition: A gram of solid enzyme powder (or a milliliter of liquid enzyme) can hydrolyze a substrate at designated temperature and pH in one minute to yield 1u mol of titratable fatty acids. This represents one unit of enzyme activity, measured in u/g (U/mL).

Application method
1. In flour applications, Lipase enhances the gluten network's stability, fortifying dough's strength and air retention. This results in bread with a lustrous, white crumb and vibrant appearance. Recommended dosage is 0.01-0.05kg per ton of flour (calculated at 100,000 units of enzyme activity). When combined with food-grade xylanase, fungal a-amylase, and glucose oxidase, it significantly elevates noodle product quality.
2. Within the tanning industry, the enzyme targets and softens leather fats, optimizing yield and minimizing chemical use, while visibly reducing skin wrinkles. It's pivotal in degreasing and softening processes, applied at 0.02-0.06% of raw material weight (enzyme activity at 100,000 units), and active at 30-40°C over 30-120 minutes. For optimum results, pairing with alkaline protease is recommended.

It effectively eliminates triglycerides in pulp and significantly enhances deinking efficiency. The ideal enzyme preparation dosage is 0.04-0.10L/T pulp, with enzyme activity rated at 100,000 units.
