Working Mechanism
Lipase, a distinguished member of the serine hydrolase family, showcases its prowess by catalyzing the hydrolysis of fatty acid glycerides, yielding glycerol and fatty acids at the oil-water interface. Beyond hydrolysis, Lipase demonstrates its versatility through its ability to facilitate ester synthesis and transesterification reactions, broadening its application scope.

1. Temperature range: Operates effectively between 30-70ºC,
with an optimal temperature band from 55-65ºC for peak performance.
2. pH range: Functions efficiently within a pH span of 4.0-10.0,
with an ideal pH of 7.5 for maximum catalytic activity.
3. Impact of metal ions on enzyme activity: Ca2+ and Mg2+ can significantly enhance enzymatic activity, while Mn²+, Fe2+ and Zn2+ may inhibit it. Cu2+ and EDTA exhibit no substantial effect on the enzyme's function.
