Working Mechanism
Lipase, a formidable serine hydrolase, excels in catalyzing the hydrolysis of fatty acid glycerides into glycerol and fatty acids. Moreover, lipase demonstrates its versatility by catalyzing ester synthesis and transesterification reactions, making it an indispensable asset in various industrial processes.

1. Temperature range: This lipase performs optimally within an effective temperature range of 30-70ºC,
with its peak performance observed between 55-65ºC, ensuring flexibility across different conditions.
2. pH range: It exhibits effectiveness within a pH range of 4.0-10.0,
with the optimum pH level at 7.5, offering adaptability to varied environments.
3. Influence of metal ions on activity: Certain ions play a pivotal role in enhancing or inhibiting enzyme activity. For instance, Ca2+ and Mg2+ significantly boost the enzyme's efficacy, while Mn²+, Fe2+ and Zn2+ tend to inhibit its power.
