Working Mechanism
Lipase, a potent serine hydrolase, is renowned for its ability to expertly catalyze the breakdown of fatty acid glycerides into glycerol and fatty acids at the critical oil-water interface. Beyond its primary hydrolysis function, this enzyme is adept at facilitating ester synthesis and transesterification, broadening its application scope.

The liquid enzyme maintains a pH range of 6.0-7.5 at 25°C and a bulk density of ≤1.25g/mL.
The solid enzyme boasts a fineness of ≥80% through a 0.4mm standard sieve.
2. Enzyme activity definition: 1g of solid powder or 1mL of liquid enzyme, under specified conditions, hydrolyzes the substrate in 1 minute to yield 1u mol of titratable fatty acids, equating to 1 unit of activity, measured in u/g (U/mL).

Application method
1. In flour products, Lipase enhances gluten network stability, boosting dough stability and air retention, resulting in bread with a whiter, shinier core. Recommended dosages range from 0.01-0.05 kg/T flour (activity measured at 100,000 units). When combined with food-grade xylanase, fungal a-amylase, and glucose oxidase, it significantly elevates noodle product quality.
2. In the tanning industry, Lipase specifically targets leather fats, gently softening materials and enhancing yield while minimizing chemical use. This results in noticeably smoother leather. Typically employed in degreasing and softening, the enzyme is used in concentrations of 0.02-0.06% (relative to raw material quality, with 100,000 units of activity) and operates at 30-40°C for 30-120 minutes. Its efficacy is further enhanced when used alongside alkaline protease.
