Heat-resistant Acid Protease
1. Optimum Reaction pH
Acid protease samples were diluted to the corresponding multiple with different pH values to determine the enzyme activity. The relative enzyme activity is calculated by taking the enzyme activity under the original enzyme determination conditions (pH 3.0, temperature 40°C) as 100%, and the results are as follows: the optimal reaction pH was 3.0.

2. pH tolerance
The acid protease sample was diluted 100 times with different pH buffer solution. After holding at room temperature for 24 h, the enzyme activity was determined by further dilution with pH3.0 buffer solution. The relative enzyme activity is calculated by taking the enzyme activity under the original enzyme determination conditions (pH 3.0, temperature 40°C) as 100%, and the results are as follows.

3. Optimum reaction temperatureAcid protease samples were taken to determine enzyme activity at different temperatures. The relative enzyme activity is calculated by taking the enzyme activity under the original enzyme determination conditions (pH 3.0, temperature 40°C) as 100%, and the results are as follows: the optimal reaction temperance was 55.

4. Heat resistance
Acid protease samples were taken, diluted 100 times with pH3.0 buffer, and kept in a water bath at different temperatures for 1h to determine the enzyme activity. The enzyme activity under the original enzyme assay conditions (pH3.0, temperature 40ºC) was 100% to calculate the relative enzyme activity, and the results were as follows.
