β-GLUCANASE (I)

1. Optimum pH
Take samples of β-glucanase and measure the enzyme activity under different pH conditions. The relative enzyme activity was calculated with the enzyme activity of 100% under the determination condition of original enzyme (pH4.8, temperature 50ºC), and the results were as follows: The optimal reaction pH was 4.8.
2. pH Tolerance
The β -glucanase samples were diluted 100 times with buffer solution of different pH values and placed at room temperature for 24h. The relative enzyme activity was calculated with the enzyme activity of 100% at pH4.8 and 50ºC, and the results were as follows.
