1.Optimum pH
The activity of α -galactosidase was determined under different pH conditions. The relative enzyme activity is calculated by taking the enzyme activity under the original enzyme determination conditions (pH 6.0, temperature 60°C) as 100%, and the optimal reaction pH was 5.0.
2. pH tolerance
The α-galactosidase sample was dissolved in buffer solution with different pH values, and the enzyme activity was measured at room temperature for 24h. The relative enzyme activity is calculated by taking the enzyme activity under the original enzyme determination conditions (pH 5.5, temperature 37°C) as 100%, and the results are as follows.
