Neutral β -mannanase

1. Optimum pH

Neutral β -mannanase samples were taken and the enzyme activity was determined under different pH conditions. The enzyme activity was 100% under the original enzyme determination condition (pH5.5 and temperature 37), and the relative enzyme activity was calculated as follows: the optimal pH was 6.5
2. pH tolerance
Neutral β-mannanase samples were taken and dissolved in buffer solution with different pH values. After being placed at room temperature for 24h, it should be shaken and diluted to the corresponding multiple to determine enzyme activity. The enzyme activity was 100% under the condition of original enzyme determination (pH5.5, temperature 37) to calculate the relative enzyme activity.
