High temperature resistant α-amylase GH

1. Optimal reaction pH
High temperature amylase samples were taken to measure the enzyme activity under different pH conditions. The relative enzyme activity is calculated by taking the enzyme activity under the original enzyme determination conditions (pH 6.0, temperature 70°C) as 100%, The results are shown in the table below. The optimal reaction pH is 5.5.
