Working Mechanism
Lipase is an exceptional serine hydrolase enzyme, renowned for its ability to drive the hydrolysis of fatty acid glycerides, resulting in the creation of glycerol and fatty acids. A distinctive attribute of this reaction is its occurrence at the vital oil-water interface. Beyond hydrolysis, Lipase also excels in catalyzing ester synthesis and transesterification reactions, making it an incredibly versatile and essential component in various biochemical processes.

1. Temperature range: Lipase remains effective within a broad temperature spectrum, efficiently operational from 30ºC to 70ºC,
with its peak performance temperature ranging from 55ºC to 65ºC.
2. pH range: The enzyme exhibits robust activity across pH levels, with an effective range from 4.0 to 10.0,
and reaches its optimal function at a pH of 7.5.
3. The influence of metal ions on enzyme activity: Ca2+ and Mg2+ are known to significantly enhance enzyme performance, while Mn²+, Fe2+ and Zn2+ tend to inhibit enzyme activity. Cu2+ and EDTA have shown no discernible impact on the enzyme's effectiveness.

Available in both liquid and solid forms, Lipase offers flexibility for diverse applications. The liquid variant presents as a brown solution with a strength of 100,000u/mL, while the solid form is a finely milled powder of 100,000u/g.
The liquid enzyme maintains a pH between 6.0 and 7.5 at 25°C, with a bulk density not exceeding 1.25g/mL.
For the solid enzyme, fineness is key; it boasts a pass rate of at least 80% through a 0.4mm standard sieve.
2. Definition of enzyme activity: Defined with precision, 1g of solid enzyme powder, or 1mL of liquid enzyme, can hydrolyze substrate to yield 1u mol of titratable fatty acids per minute under specified temperature and pH conditions, equating to 1 unit of enzyme activity, measured in u/g (U/mL).

Application method
1. In the realm of flour-based products, Lipase plays a crucial role in reinforcing the integrity of the gluten network. It bolsters dough stability, enhances air retention, and lends a brilliant whiteness and gloss to bread cores. The recommended usage is between 0.01-0.05kg per ton of flour (activity measured at 100,000 units). When combined with food-grade xylanase, fungal alpha-amylase, and glucose oxidase, Lipase comprehensively elevates noodle quality to another echelon.
2. Within the tanning industry, Lipase targets fat within leather to achieve a uniform softening of raw materials under gentle conditions. This not only increases leather yield while reducing chemical input but also minimizes skin wrinkles for a pristine finish. Commonly used in degreasing and softening processes, it is added at 0.02-0.06% of raw material weight (activity at 100,000 units), with optimal function between 30-40°C over a duration of 30-120 minutes. Often, it is paired with alkaline protease to maximize the outcome.
3. By integrating this enzyme into feed, it deftly releases short-chain fats and counters acidity, significantly elevating the efficiency of raw material usage. Moreover, it remarkably enhances the feed's flavor profile. Typically, a dosage ranging from 0.01% to 0.05% is recommended, based on raw material quality and enzyme activity measured at 100,000 units.
4. Within the paper industry, lipase serves a pivotal role in the mechanical pulping process and waste paper deinking. During pulping, it effectively eliminates triglycerides from the pulp, thereby boosting deinking efficiency when treating waste paper. The enzyme preparation is added at a rate of 0.04 to 0.10 liters per ton of pulp, with an enzyme activity level of 100,000 units.
Packaging and Storage
The liquid product is securely packaged in a plastic drum, each holding 25kg, while the solid product is contained in a sturdy woven bag, with each bag weighing 20kg.
As a biologically active substance, exposure to high temperatures, strong acids, or alkalis will deactivate the enzyme. Hence, during transit and storage, liquid enzymes must be shielded from direct sunlight, and solid enzymes should be protected from both sunlight and rain. It's crucial to maintain a clean, cool, and dry warehouse environment.
