Working Mechanism
As a distinguished member of the serine hydrolase family, Lipase exhibits the remarkable ability to catalyze the hydrolysis of fatty acid glycerides, culminating in the production of glycerol and fatty acids. This results in bread with a luminescent, white crumb and a pristine, shiny crust. The recommended usage is 0.01-0.05kg per ton of flour, calculated at 100,000 units of enzyme activity. When synergistically combined with food-grade xylanase, fungal alpha-amylase, and glucose oxidase, this enzyme blend substantially elevates the quality of noodle products to new heights.
2. In the leather tanning industry, Lipase adeptly targets fat within the leather under gentle conditions, promoting uniform softening, increasing yield, and minimizing chemical usage. This process results in visibly reduced skin wrinkles. Commonly utilized in degreasing and softening operations, the enzyme is applied at 0.02-0.06% based on raw material quality, with an activity level of 100,000 units. Optimal efficiency is achieved at 30-40°C over a period of 30-120 minutes. For enhanced outcomes, it is frequently paired with alkaline protease.
